PKM Chili Cook Off

If you’re looking for a fun accounting firm atmosphere, PKM is a great place to start! Recently we held our inaugural Chili Cook Off immediately following the PKM state of the firm meeting. Prior to the meeting we solicited our PKMers to sign up in teams or individually to bring in their favorite chili recipe. PKM provided all the “fixin’s” and we set up tables in our lobby early that morning and the various teams brought in their crock pots full of chili! Soon enough, the lobby began to smell really yummy! At the meeting we passed out tokens and had folks line up and do a “taste test” of all the different types of chili, placing their coin into the bag to vote for their favorite recipe. We had one winning team and two runner ups. The winning team members each received $50, and the runner ups each received $25 and a cook book. I can’t wait to have our next chili cook off!

Here is the winning recipe for you to try at home, called “The Best Chili You Will Ever Taste.”

2 teaspoons oil
2 onions, chopped
3 cloves garlic, minced
1 lb lean ground beef
3/4 lb beef sirloin, cubed
1 (14 1/2 ounce) cans diced tomatoes
1 can dark beer
1 cup strong coffee
2 (6 ounce) cans tomato paste
1 can beef broth
1/2 cup brown sugar
3 1/2 tablespoons chili sauce1 tablespoon cumin
1 tablespoon cocoa
1 teaspoon oregano
1 teaspoon cayenne
1 teaspoon coriander
1 teaspoon salt
4 (15 ounce) cans kidney beans
4 chili peppers, chopped

Heat oil. Cook onions, garlic and meat until brown. Add tomatoes, beer, coffee, tomato paste and beef broth.
Add spices Stir in 2 cans of kidney beans and peppers. Reduce heat and simmer for 1 1/2 hours. Add 2 remaining cans of kidney beans and simmer for another 30 minutes.
